The one where I make a meal plan and stick to it.

So, I am yet again going to try to go vegitarian, (the ovo-lacto kind- meaning I will eat eggs, cheese and milk.) I was inspired to try again since it was my daughter's new year resolution, and she has been able to stick to it.
So- a major dilemna I always have the several other times I have tried this, is I actually end up gaining weight, because I am not a use veggie fan, but am a carboholic.

So this weeks menu:

Breakfasts:
Egg Cassarole
Oatmeal
Toast and fake sausage
Scrambled Eggs

Lunches:
Quesadillas
Salad
PB and J
Baked Potatoes
Pasta

Dinner:
Rissoto
Chili (Beans only)
Burritos
Baked Beans
Enchiladas
Soup
Pizza

Yay! I'm so excited for you!

Do you like curries? I find a cauliflower and potato curry or a chickpea curry are really satisfying, with a side of rice pilaf... yum!

What about stirfry? Do you like tofu? I can't eat it myself, but a good stirfry is always filling and satisfying.

I am a carboholic too, and find eating carbs is actually okay as long you make sure you are only eating whole grain carbs, like brown rice, whole wheat pasta and grainy breads.

Another good snack is hummus with whole wheat baked pita chips and veggie sticks.

Last night we made a big yummy salad that was SO good. It had romaine, tomato, cucumber, avocado, feta and croutons with a light vinaigrette.

Another couple of faves here is veggie lasagna and pizza... YUM!

I might have to steal a couple diner ideas from you. We're not vegetarians but its always good to have a little more variety and a little less meat.
